Recipe: Grilled Chicken Salad

Ingredients
Marinade
- 2 large chicken breasts, butterflied and thinned
- 1 tablespoon honey
- 1 tablespoon mustard
- ¼ cup canola oil
- ½ teaspoon lemon juice
- ¼ teaspoon soy sauce
- ¼ teaspoon salt
- ¼ teaspoon pepper
Salad
- 2 romaine hearts, cut into bite-size pieces
- 1 cup arugula
- 1 cucumber, diced
- 1 small red onion, diced
Dressing
- ½ cup mayonnaise
- ¼ cup oil
- ¼ cup water
- 1 tablespoon sugar
- ½ teaspoon soy sauce
- ¼ teaspoon vinegar
- 1 clove garlic, crushed
- 1 teaspoon mustard
- ½ teaspoon salt
- ½ teaspoon pepper
Directions
- Whisk all marinade ingredients until smooth.
- Place in zipper bag with chicken; shake until fully coated and allow chicken to marinate overnight, or for a minimum of two hours.
- Grill chicken on medium-high flame for 5-7 minutes a side.
- Meanwhile, whisk all salad dressing ingredients together until smooth.
- Combine salad greens in a large bowl topped with sliced chicken breast.
- Drizzle dressing over salad and enjoy.
